Poor Man's Dinner ~Courtesy of "When the Dinner Bell Rings"
1 lb. ground beef
6 large potatoes
1 large onion, chopped
2 cans cream of mushroom or celery soup
Brown ground beef. Slice potatoes and chop onions thinly. Layer in a baking pan, starting with beef, potatoes, and then onions. Pour soup over the mixture and bake at 400 degrees for about one hour.
Use turkey burger or sausage & maybe roasted garlic mushroom soup. :)

"PEACHY CHICKEN"
When I was pregnant, my daughter's Grandma Shari gave me all her son's favorite recipes. This is one of our all time favorites, it's cheap, easy & can be doctored to your liking.
"Peachy Chicken"
8 chicken breasts or thighs
2 C instant rice
1 1/2 T soy sauce
5 T butter
1 can sliced peaches
Coconut
Powdered ginger
Add rice & soy sauce to 2 C boiling water, set aside, covered.
Brown chicken in butter, scraping bits in pan.
Spread rice in casserole dish, top with chicken & pour butter & bits over chicken & rice.
Cover & bake at 400 for 45-60 mins.
Uncover & arrange peaches on top, sprinkle with coconut & ginger.
Broil on middle rack for a few minutes, watch so it doesn't burn.
Serves 4-6

Gnocchi "mac & cheese" with kale.
I didn't have any fancy cheese, so I just used what was in the fridge. Turned out so yummy. Can't wait to tweak the recipe to my liking.

My "Stuffed" hashbrowns...
I go to a bar before softball on Saturday and they have these amazing stuffed hashbrowns with bacon, green onion, cream cheese and sour cream. I had some leftover steak from lunch yesterday, always have bacon grease, so I came up with my version. Crispy hashbrowns, cream cheese, steak, green onion, egg, parmesean cheese and sour cream. HEAVEN!!! Now all I need is for my Red Sox to win and it'll be a perfect day. :)

My girl and I decided to grill because she goes to her boyfriend's house on tuesdays. Good stuff!

1 can cresent rolls pressed into 9 x 9 pan
About 2 C frozen hashbrowns cooked with some bell peppers
8 cooked and chopped sausage links
4 beaten eggs
Cheese
Green onion for garnish
Bake for about 15 mins until eggs set at 375

Chillin' n Grillin'
My first BBQ'd rib eye on a gas grill in 25ish years. Yes, I just aged myself. Balsamic 'shrooms and bacon~garlic taters. SUCCESS!
I've got plenty of leftover rib eye, 12 oz is too much for me. Coincidently, I've got half of a BLT from lunch yesterday, so I'm going to make that into a SBLT for late lunch before shopping. Tomorrow morning will be a steak burrito with the leftover 'shrooms, taters and steak. NOMS!
